Chinese Eggs Recipes - Egg Foo Yung Recipe

Ingredients

  • 4 eggs, lightly beaten

  • salt

  • 100g/4oz cooked chicken, chopped

  • 1 onion, chopped

  • 2 stalks, celery, chopped

  • 50g/2oz mushrooms, chopped

  • 30ml/2 tbsp peanut oil

  • egg foo yung sauce


Method:

  1. Mix together the eggs, salt, chicken, onion, celery and mushrooms.

  2. Heat a little of the oil and spoon one quarter of the mixture into the pan.

  3. Fry until the underside is lightly browned then turn and brown the other side. Serve with egg foo yung sauce.
