Mix the egg yolks
with the soy sauce, sugar, salt and pepper. Cut the
fish into large pieces. Dip the fish into the
mixture until well coated.
Heat the oil and
fry the fish until lightly browned on the underside.
Meanwhile, whisk
the egg whites until stiff. Turn the fish over and
spoon the egg white on to the top of the fish.
Cook for 2
minutes until the underside is lightly browned then
turn again and cook for a further 1 minute until the
egg whites is set and golden brown. Serve with
tomato sauce.
