Chinese Eggs Recipes - Half Moon Eggs Recipe

Ingredients

  • 45ml/3 tbsp peanut oil

  • 4 eggs

  • 15ml/1 tbsp soy sauce

  • salt and freshly ground pepper

  • 15ml/1 tbsp chopped fresh flat-laved parsley


Method:

  1. Heat the oil until very hot and break the eggs into the pan. Cook until the underside is lightly browned then sprinkle with salt, pepper and soy sauce.

  2. Fold the egg in half and press down gently so that it holds and press down gently so that it holds together.

  3. Cook for a further 2 minutes until golden brown on both sides then serve sprinkled with parsley.
