Chinese Eggs Recipes - Omelet with Lobster Recipe

Ingredients

  • 4 eggs

  • salt and freshly ground pepper

  • 30ml/2 tbsp peanut oil

  • 3 spring onions, chopped

  • 100g/4oz lobster, chopped


Method:

  1. Beat the eggs lightly and season with salt and pepper. Heat the oil and stir-fry the spring onions for 1 minute.

  2. Add the lobster and stir until coated with oil. Pour the eggs into the pan and tilt the pan so that the egg covers the surface.

  3. Lift the edges of the omelet as the eggs set so that the uncooked egg can run underneath.

  4. Cook until just set then fold in half and serve at once.
