Chinese Eggs Recipes - Omelet with Prawns Recipe

Ingredients

  • 4 eggs

  • salt and freshly ground pepper

  • 30ml/2 tbsp peanut oil

  • 15ml/1 tbsp rice wine or dry sherry

  • 1 slice ginger root, minced

  • 225g/8oz peeled prawns


Method:

  1. Beat the eggs lightly with the wine or sherry and season with salt and pepper.

  2. Heat the oil and stir-fry the ginger until lightly browned. Add the prawns and stir until coated with oil.

  3. Pour the eggs into the pan and tilt the pan sot that the egg covers the surface.

  4. Lift the edges of the omelet as the eggs et so that the uncooked egg can run underneath.

  5. Cook until just set then fold in half and serve at once.
