Chinese Eggs Recipes - Oyster Pancakes Recipe

Ingredients

  • 12 oysters

  • 4 eggs, lightly beaten

  • salt and freshly ground pepper

  • 3 spring onions, chopped

  • 6ml/4 tbsp plain (all-purpose) flour

  • 2.5ml/1/2 tsp baking powder

  • 45ml/3 tbsp peanut oil


Method:

  1. Shell the oysters, reserving 60ml/4 tbsp of the liquor, and chop them coarsely.

  2. Mix the eggs with the oysters, spring onions, salt and pepper.

  3. Mix together the flour and baking powder, blend it to a paste with oyster liquor then stir the mixture into the eggs.

  4. Heat a little oil and fry spoonfuls of the batter to make small pancakes.

  5. Cook until lightly browned on each side then add a little more oil to the pan and continue until the mixture has been used.
