Chinese Eggs Recipes - Oyster Pancakes Recipe
Ingredients

12 oysters
-
4 eggs, lightly beaten
-
salt and freshly ground
pepper
-
3 spring onions, chopped
-
6ml/4 tbsp plain
(all-purpose) flour
-
2.5ml/1/2 tsp baking powder
-
45ml/3 tbsp peanut oil
Method:
-
Shell the
oysters, reserving 60ml/4 tbsp of the liquor, and
chop them coarsely.

Mix the eggs with
the oysters, spring onions, salt and pepper.

Mix together the
flour and baking powder, blend it to a paste with
oyster liquor then stir the mixture into the eggs.

Heat a little oil
and fry spoonfuls of the batter to make small
pancakes.

Cook until
lightly browned on each side then add a little more
oil to the pan and continue until the mixture has
been used.
