Chinese Eggs Recipes - Pork Stuffed Omelet Recipe

Ingredients

  • 50g/2oz bean sprouts

  • 60ml/4 tbsp peanut oil

  • 225g/8oz lean pork, diced

  • 3 spring onions, chopped

  • 1 stalk celery, chopped

  • 15ml/1 tbsp soy sauce

  • 5ml/1 tsp sugar

  • 4 eggs, lightly beaten

  • salt


Method:

  1. Blanch the bean sprouts in boiling water for 3 minutes then drain well. Heat the oil and stir-fry the pork until lightly browned.

  2. Add the spring onions and celery and stir-fry for 1 minute. Add the soy sauce and sugar and stir-fry for 2 minutes. Remove from the pan.

  3. Season the beaten eggs with salt. Heat the remaining oil and pour the eggs into the pan, tilting the pan so that the egg covers the surface.

  4. Lift the edges of the omelet as the eggs et so that the uncooked egg can run underneath.

  5. Cook until just set then fold in half and serve at once.
