Chinese Eggs Recipes - Prawn Pancakes Recipe

Ingredients

  • 50g/4oz peeled prawns, minced

  • 4 eggs, lightly beaten

  • 75g/2/3 cup plain (all-purpose) flour

  • salt and freshly ground pepper

  • 120ml/1/2 cup chicken stock

  • 2 spring onions, chopped

  • 30ml/2 tbsp peanut oil


Method:

  1. Mix together all the ingredients except the oil. Heat a little of the oil, pour in one quarter of the batter, tilting the pan to spread it over the base.

  2. Cook until lightly browned on the underside then turn and brown the other side.

  3. Remove from the pan and continue to cook the remaining pancakes.
