Chinese Eggs Recipes - Prawn Soufflé with Bean Sprouts Recipe

Ingredients

  • 100g/4oz bean sprouts

  • 100g/4oz peeled prawns, coarsely chopped

  • 2 spring onions, chopped

  • 5ml/1 tsp corn-flour

  • 15ml/1 tbsp rice wine or dry sherry

  • 120ml/1/2 cup chicken stock

  • salt

  • 4 egg whites

  • 45ml/3 tbsp peanut oil


Method:

  1. Blanch the bean sprouts in boiling water for 2 minutes then drain and keep warm.

  2. Meanwhile, mix the prawns, onions, corn-flour, wine or sherry and stock and season with salt.

  3. Whisk the egg whites until stiff then fold them into the mixture. 

  4. Heat the oil to smoking point, add the mixture and stir well then lower the heat and continue to cook, stirring gently, until the mixture is just firm.

  5. Place on a warmed serving dish and top with the bean sprouts.
