Chinese Eggs Recipes - Prawn Soufflé Recipe
Ingredients

225g/8oz peeled prawns,
chopped
-
1 slice ginger root, minced
-
15ml/1 tbsp rice wine or
dry sherry
-
15ml/1 tbsp soy sauce
-
salt and freshly ground
pepper
-
4 egg whites
-
45ml/3 tbsp peanut oil
Method:

Mix together the
prawns, ginger, wine or sherry, soy sauce, salt ad
pepper.

Whisk the egg
whites until stiff then fold them into the mixture.
-
Heat the oil to
smoking point, add the mixture and stir well then
lower the heat and continue to cook, stirring
gently, until the mixture is just firm.
