Chinese Eggs Recipes - Prawn Soufflé Recipe

Ingredients

  • 225g/8oz peeled prawns, chopped

  • 1 slice ginger root, minced

  • 15ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp soy sauce

  • salt and freshly ground pepper

  • 4 egg whites

  • 45ml/3 tbsp peanut oil


Method:

  1. Mix together the prawns, ginger, wine or sherry, soy sauce, salt ad pepper.

  2. Whisk the egg whites until stiff then fold them into the mixture.

  3. Heat the oil to smoking point, add the mixture and stir well then lower the heat and continue to cook, stirring gently, until the mixture is just firm.
