Chinese Eggs Recipes - Prawn Stuffed Omelet Recipe

Ingredients

  • 30ml/2 tbsp peanut oil

  • 2 stalks celery, chopped

  • 2 spring onions, chopped

  • 225g/8oz peeled prawns, halved

  • 4 eggs, lightly beaten

  • salt


Method:

  1. Heat half the oil ad stir-fry the celery and onions until lightly browned. Add the prawns and stir-fry until heated through. Remove from the pan.

  2. Season the beaten eggs with salt. Heat the remaining oil and pour the eggs into the pan, tilting the pan so that the egg covers the surface.

  3. Lift the edges of the omelet as the eggs et so that the uncooked egg can run underneath.

  4. Spoon the filling on to half the omelet and fold in half. Cook until just set then fold in half and serve at once.
