Ingredients

100g/4 oz rock salt

6 duck eggs
Method:

Bring the water
to the boil with the salt and stir until the salt
has dissolved. Leave to cool.

Pour the salt
water into a large jar, add the eggs, cover and
leave to stand for 1 month.

Hard-boil the
eggs before steaming with rice.
