Chinese Eggs Recipes - Scrambled Eggs with Fish Recipe

Ingredients

  • 4 eggs, lightly beaten

  • 225g/8oz fish fillet

  • 1 slice ginger root, minced

  • 2 spring onions, chopped

  • salt and freshly ground pepper

  • 30ml/2 tbsp peanut oil


Method:

  1. Place the fish in an ovenproof bowl and lace on a rack in a steamer.

  2. Cover and steam for about 20 minutes then remove the skin and flake the flesh.

  3. Heat the oil and stir-fry the ginger and spring onions until lightly browned. Add the fish and stir until coated with oil.

  4. Season the eggs with salt and pepper the pour them into the pan and stir gently with a fork until the eggs are just set. Serve at once.
