Chinese Eggs Recipes - Scrambled Eggs with Mushrooms Recipe

Ingredients

  • 4 eggs, beaten

  • 30ml/2 tbsp peanut oil

  • 3 spring onions, chopped

  • pinch of salt

  • 5ml/1 tsp soy sauce

  • 100g/4oz mushrooms, roughly chopped


Method:

  1. Heat the oil and gently fry the mushrooms for a few minutes until heated through then remove them from the pan.

  2. beat the eggs with the spring onions, salt and soy sauce. Heat the remaining oil then pour in the egg mixture.

  3. Stir gently with a fork until the eggs begin to set, then return the mushrooms to the pan and cook until the eggs are just set. Serve at once.
