Chinese Eggs Recipes - Scrambled Eggs with Oyster Sauce Recipe

Ingredients

  • 4 eggs, beaten

  • 30ml/2 tbsp peanut oil

  • 3 spring onions, chopped

  • salt and freshly ground pepper

  • 5ml/1 tsp soy sauce

  • 15ml/1 tbsp oyster sauce

  • 100g/4oz cooked ham, shredded

  • 2 sprigs flat-leaved parsley


Method:

  1. Beat the eggs with the spring onions, salt, pepper and soy sauce. Stir in half the oil.

  2. Heat the remaining oil then pour in the egg mixture. Stir gently wit a fork until the eggs begin to set then stir in the oyster sauce and cook until the eggs are just set.

  3. Serve garnished with the ham and parsley.
