Chinese Eggs Recipes - Scrambled Eggs with Pork and Prawns Recipe

Ingredients

  • 4 eggs, lightly beaten

  • 225g/8oz lean pork, cut into slivers

  • 100g/4oz minced pork

  • 2 spring onions, chopped

  • 1 slice ginger root, minced

  • 5ml./1 tsp corn-flour

  • 15ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp soy sauce

  • salt ad freshly ground pepper

  • 45ml/3 tbsp peanut oil


Method:

  1. Mix together the pork, prawns, spring onions, ginger , corn-flour, wine or sherry, soy sauce, salt and pepper.

  2. Heat the oil and stir-fry the pork mixture until lightly browned.

  3. Pour in the eggs and stir gently with a fork until the eggs are just set. Serve at once.
