Chinese Eggs Recipes - Scrambled Eggs with Pork  Recipe

Ingredients

  • 4 eggs, beaten

  • 225g/8oz lean pork, cut into slivers

  • 30ml/2 tbsp soy sauce

  • 30ml/2 tbsp peanut oil

  • 2 spring onions, chopped

  • pinch of salt

  • 5ml/1 tsp soy sauce


Method:

  1. Mix together the pork ad soy sauce so that the pork is well coated.

  2. Heat the oil and stir-fry the pork until lightly browned. Add the spring onions and stir-fry for 1 minute.

  3. Beat the eggs with the spring onions, salt and soy sauce then pour the egg mixture into the pan.

  4. Stir gently with a fork until the eggs are just set. Serve at once.
