Chinese Eggs Recipes - Scrambled Eggs with Spinach Recipe

Ingredients

  • 4 eggs, beaten

  • 45m/3 tbsp peanut oil

  • 225g/8oz spinach

  • 2 spring onions, chopped

  • pinch of salt


Method:

  1. Heat half the oil and stir-fry the spinach for a few minutes until it turns bright green but does not wilt.

  2. Remove it from the pan and chop it finely. Beat the eggs with the spring onions, salt and soy sauce, if using. Stir in the spinach.

  3. Heat the oil then pour in the egg mixture. Stir gently with a fork until the eggs are just set. Serve at once.
