Chinese Eggs Recipes - Scrambled Eggs with Tomatoes Recipe

Ingredients

  • 4 eggs, beaten

  • 2 spring onions, chopped

  • pinch of salt

  • 3 tomatoes, skinned and chopped

  • 30ml/2 tbsp peanut oil


Method:

  1. Beat the eggs with the spring onions and salt. Heat the oil then pour in the egg mixture.

  2. Stir gently until the eggs begin to set, then mix in the tomatoes and continue to cook, stirring, until just set. Serve at once.
