Ingredients
Method:

Heat half the
peanut oil with sesame oil and stir-fry the pepper
and garlic until lightly browned.

Add the mange
tout and stir-fry for 1 minute. Beat the eggs with
the spring onions, salt and soy sauce then our the
mixture into the pan.

Stir gently with
a fork until the eggs are just set. Serve at once.
