Chinese Eggs Recipes - Scrambled Eggs with Vegetables Recipe

Ingredients

  • 4 eggs, beaten

  • 5ml/1 tsp sesame oil

  • 1 green pepper, diced

  • 1 clove garlic, chopped

  • 100g/4oz mange tout (snow peas) halved

  • 2 spring onions, chopped

  • pinch of salt

  • 5ml/1 tsp soy sauce

  • 30ml/2 tbsp peanut oil


Method:

  1. Heat half the peanut oil with sesame oil and stir-fry the pepper and garlic until lightly browned.

  2. Add the mange tout and stir-fry for 1 minute. Beat the eggs with the spring onions, salt and soy sauce then our the mixture into the pan.

  3. Stir gently with a fork until the eggs are just set. Serve at once.
