Place the eggs in
a saucepan, cover with cold water, bring to the boil
and boil for 10 minutes. Drain and cool under
running water.
Return the eggs
to the pan and add the soy sauce, water and sugar.
Bring to the boil, cover and simmer for 1 hour.
Arrange the lettuce on serving plate.
Quarter the eggs
and place on top of the lettuce. Serve garnished
with tomatoes.
