Chinese Eggs Recipes - Steamed Eggs with Ham and Fish Recipe

Ingredients

  • 225g/8oz sole fillets, cut into strips

  • 6 eggs, separated

  • 375ml/1 1/2 cups warm water

  • pinch of salt

  • 50g/2 oz smoked ham, chopped

  • 15ml/1 tbsp peanut oil

  • sprigs flat-leaf parsley


Method:

  1. Mix the egg white with the fish, half the water and a little salt and pour the mixture into a shallow ovenproof dish.

  2. Mix the egg yolks with the remaining water, the ham and a little salt and pour it on top of the egg white mixture.

  3. Place the dish on a rack in a steamer, cover and steam over gently simmering water for about 20 minutes until the eggs are set.

  4. Heat the oil to smoking point, pour it over the eggs and serve garnished with parsley.
