Chinese Eggs
Recipes - Steamed Eggs with Ham and Fish Recipe
Ingredients

225g/8oz sole fillets, cut
into strips
-
6 eggs, separated
-
375ml/1 1/2 cups warm water
-
pinch of salt
-
50g/2 oz smoked ham,
chopped
-
15ml/1 tbsp peanut oil
-
sprigs flat-leaf parsley
Method:
-
Mix the egg white
with the fish, half the water and a little salt and
pour the mixture into a shallow ovenproof dish.
-
Mix the egg yolks
with the remaining water, the ham and a little salt
and pour it on top of the egg white mixture.
-
Place the dish on
a rack in a steamer, cover and steam over gently
simmering water for about 20 minutes until the eggs
are set.
-
Heat the oil to
smoking point, pour it over the eggs and serve
garnished with parsley.
