Chinese Eggs Recipes - Steamed Eggs with Pork Recipe

Ingredients

  • 225g/8oz sole fillets, cut into strips

  • 45ml/3 tbsp peanut oil

  • 100g/4 oz water chestnuts, minced

  • 1 spring onion, chopped

  • 30ml/2 tbsp soy sauce

  • 5ml/1 tsp salt

  • 120ml/1/2 cup chicken stock

  • 4 eggs, lightly beaten


Method:

  1. Heat the oil and fry the pork, water chestnuts and spring onions until lightly colored.

  2. Stir in the soy sauce and salt the drain off any excess oil and spoon into a shallow ovenproof dish.

  3. Warm the stock then stir it into the eggs and pour over the meat mixture.

  4. Place the dish on a rack in a steamer, cover and steam over gently simmering water for about 30 minutes until the eggs are just set.
