Chinese Eggs Recipes - Steamed Eggs Recipe

Ingredients

  • 250ml/1 cup chicken stock

  • 4 eggs, lightly beaten

  • 15ml/1 tbsp rice wine or dry sherry

  • 5ml/1 tsp peanut oil

  • 2.5ml/1/2 tsp salt

  • 2.5ml/1/2 tsp sugar

  • 2 spring onions, chopped

  • 15ml/1 tbsp soy sauce


Method:

  1. Beat the eggs lightly with the wine or sherry, oil, salt, sugar and spring onions.

  2. Warm the stock then slowly stir it into the egg mixture and pour into a shallow ovenproof dish.

  3. Place the dish on a rack in a steamer, cover and steam for about 30 minutes over gently simmering water until the mixture is the consistency of thick custard.

  4. Sprinkle with soy sauce before serving.
