Chinese Eggs Recipes - Vegetable Soufflé Recipe

Ingredients

  • 5 eggs, separated

  • 3 potatoes, grated

  • 1 small onion, finely chopped

  • 15ml/1 tbsp chopped fresh parsley

  • 5ml/1 tsp soy sauce

  • salt and freshly ground pepper


Method:

  1. Beat the egg whites until stiff. Beat the egg yolks until pale and thick then add the potatoes, onion, parsley and soy sauce and stir together well. Fold in the egg whites.

  2. Pour into a greased soufflé dish and bake in a preheated oven at 180C/350F/gas mark 4 for about 40 minutes.
