Chinese Lamp Recipes - Lamb with Broccoli Recipe

Ingredients

  • 75 ml/5 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 450 g/1lb lamb, cut into strips

  • 450 g/1lb broccoli florets

  • 250 ml/1 cup stock

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp freshly ground pepper

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 75 ml/5 tbsp water

  • 5 ml/1 tsp soy sauce


Method:

  1. Heat the oil and fry the garlic and lamb until cooked through.

  2. Add the broccoli and stock, bring to the boil, cover and simmer for about 15 minutes until the broccoli is tender. Season with salt and pepper.

  3. Mix the corn-flour, water and soy sauce to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
