Chinese Lamp Recipes - Lamb with Green Beans Recipe

Ingredients

  • 450 g/1lb green beans, cut into julienne strips

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 450 g/1lb lean lamb, thinly sliced

  • 250 ml/8 fl oz/1 cup stock

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp freshly ground pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 5 ml/1 tsp soy sauce

  • 75 ml/5 tbsp water


Method:

  1. Blanch the beans in boiling water for 3 minutes then drain well. Heat the oil and fry the meat until lightly browned on all sides.

  2. Add the stock, bring to the boil, cover and simmer for 5 minutes. Add the beans, salt and pepper, cover and simmer for 4 minutes until the meat is cooked.

  3. Blend the corn-flour, soy sauce and water to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens.
