Recipes - Lamb with Green Beans Recipe
Ingredients

450 g/1lb green beans, cut
into julienne strips
-
45 ml/3 tbsp groundnut (peanut)
oil
-
450 g/1lb lean lamb, thinly sliced
-
250 ml/8 fl
oz/1 cup stock
-
5 ml/1 tsp salt
-
2.5 ml/1/2 tsp freshly ground
pepper
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
5 ml/1 tsp soy sauce
-
75 ml/5 tbsp water
Method:
-
Blanch the beans in boiling water for 3 minutes then
drain well. Heat the oil and fry the meat until
lightly browned on all sides.

Add the stock, bring
to the boil, cover and simmer for 5 minutes. Add the
beans, salt and pepper, cover and simmer for 4
minutes until the meat is cooked.

Blend the corn-flour, soy sauce and water to a paste, stir into
the pan and simmer, stirring, until the sauce clears
and thickens.
