Ingredients

75 ml/5 tbsp prepared
mustard

15ml/1 tbsp soy sauce

1
clove garlic, crushed

5 ml/1 tsp chopped fresh
thyme

1 slice ginger root, minced

15 ml/1 tbsp groundnut
(peanut) oil

1.25 kg/3 lb leg of lamb
Method:
-
Mix together all the seasoning ingredients until
creamy. Spread over the lamb and leave to stand for
a few hours.

Roast in a preheated oven at
180C/350F/gas mark 4 for about 1 1/2 hours.
