Chinese Lamp Recipes - Red-Cooked Lamb Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 450 g/1 lb lamb chops

  • 250 ml/8 fl oz/1 cup chicken stock

  • 1 onion, cut into wedges

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 5 ml/1 tsp salt

  • 1 slice ginger root, chopped


Method:

  1. Heat the oil and fry the chops until browned on both sides.

  2. Add the remaining ingredients, bring to the boil, cover and simmer for about 1 1/2 hours until the lamb is tender and the sauce has reduced.
