Chinese Lamp Recipes - Tender Lamb Steaks Recipe

Ingredients

  • 450 g/1 lb lean lamb

  • 15 ml/1 tbsp soy sauce

  • 10 ml/2 tsp rice wine or dry sherry

  • 2.5 ml/1/2 tsp salt

  • 1 small onion, chopped

  • 45 ml/3 tbsp groundnut (peanut) oil


Method:

  1. Slice the lamb thinly against the grain and arrange in a dish.

  2. Mix together the soy sauce, wine or sherry, salt and oil, pour over the lamb, cover and marinate for 1 hour. Drain well.

  3. Heat the oil and fry the lamb for about 2 minutes until just tender.
