Chinese Noodles and Pastry Recipes - Beef Noodles Recipe

Ingredients

  • 350g/12oz egg noodles

  • 45ml/3 tbsp peanut oil

  • 450g/1 lb minced beef

  • salt and freshly ground pepper

  • 1 clove garlic, crushed

  • 1 onion, finely chopped

  • 250ml/1 cup of beef stock

  • 100g/4oz mushrooms, sliced

  • 2 stalks celery, chopped

  • 1 green pepper, chopped

  • 30ml/2 tbsp corn-flour

  • 60ml/4 tbsp water

  • 15ml/1 tbsp soy sauce


Method:

  1. Cook the noodles in boiling water for about 8 minutes until just tender then drain.

  2. Meanwhile, heat the oil and fry the beef, salt, pepper, garlic and onion until lightly browned.

  3. Add the stock, mushrooms, celery and pepper, bring to the boil, cover and simmer for 5 minutes.

  4. Blend the corn-flour, water and soy sauce to a paste , stir into the pan and simmer, stirring, until the sauce thickens.

  5. Arrange the noodles on a warmed serving plate and pour over the beef and sauce.
