Chinese Noodles and Pastry Recipes - Braised Noodles Recipe

Ingredients

  • 4 dried Chinese mushrooms

  • 450g/1 lb egg noodles

  • 30ml/2 tbsp peanut oil

  • 5ml/1 tsp salt

  • 3 spring onions, chopped

  • 100g/4 oz lean pork, cut into strips

  • 100g/4 oz cauliflower florets

  • 15ml/1 tbsp corn-flour

  • 250ml/1 cup chicken stock

  • 15ml/1 tbsp sesame oil


Method:

  1. Soak the mushrooms in warm water for 30 minutes the drain. Discard the stalks and slice the caps.

  2. Bring a saucepan of water to the boil, add the noodles and boil for 5 minutes then drain.

  3. Heat the oil and fry the salt and spring onions for 30 seconds. Add the pork and stir-fry until lightly colored. Add the cauliflower and mushrooms and stir-fry for 3 minutes.

  4. Mix the corn-flour and stock, stir it into the pan, bring to the boil, cover and simmer for 10 minutes, stirring occasionally.

  5. Heat the sesame oil in a separate pan, add the noodles and stir gently over a medium heat until lightly browned.

  6. Transfer to a warmed serving dish, pour over the pork mixture and serve.
