Chinese Noodles and Pastry Recipes - Cooked Egg Roll Skins Recipe

Ingredients

  • 175g/1 1/2 cups plain (all-purpose) flour

  • 2.5ml/1/2 tsp salt

  • 2 eggs, beaten

  • 375ml/1 1/2 cups water


Method:

  1. Mix the flour and salt then blend in the eggs. Gradually add the water to make a smooth batter.

  2. Lightly grease a small frying pan then pour in 30ml/2 tbsp of batter and tilt the pan to spread it evenly over the surface.

  3. When the dough shrinks from the sides of the pan remove it and cover with a damp cloth while you cook the remaining skins.
