Chinese Noodles and Pastry Recipes - Fried Noodles Recipe

Ingredients

  • 225g/8oz thin egg noodles

  • salt

  • oil for deep-frying


Method:

  1. Cook the noodles in boiling salted water according to the instructions on the packet. Drain well.

  2. Arrange several layers of kitchen paper on a baking sheet, spread out the noodles and leave to dry for several hours.

  3. Heat the oil and fry spoonfuls of the noodles at a time for about 30 seconds until golden. Drain on kitchen paper.
