Chinese Noodles and Pastry Recipes - Ginger and Spring Onion Noodles Recipe

Ingredients

  • 900g/4 1/4 cups chicken stock

  • 15ml/1 tbsp peanut oil

  • 225g/8oz egg noodles

  • 2.5ml/1/2 tsp sesame oil

  • 4 spring onions, shredded

  • 2 slices ginger root, shredded

  • 15ml/1 tbsp soy sauce


Method:

  1. Bring the stock to the boil, add the oil and noodles and simmer, uncovered, for about 15 minutes until tender.

  2. Transfer the noodles to a warmed serving plate and add the sesame oil, spring onions and ginger to the wok.

  3. Simmer, uncovered, for 5 minutes until the vegetables are slightly softened and the stock reduced.

  4. Spoon the vegetables over the noodles with a little of the stock. Sprinkle with oyster sauce and serve at once.
