Chinese Noodles and Pastry Recipes - Noodles with Crab
Meat Recipe
Ingredients
350g/12oz egg noodles
45ml/3 tbsp peanut oil
3 spring onions, chopped
2 slices ginger root, cut
into strips
350g/12oz crab meat, flaked
5ml/1 tsp salt
15ml/1 tbsp wine or dry
sherry
15ml/1 tbsp corn-flour
30ml/2 tbsp water
30ml/2 tbsp white vinegar
Method:
Bring a pan
of water to the boil, add the noodles and boil
for 10 minutes until just tender.
Meanwhile,
heat 30ml/2 tbsp of the oil and fry the spring
onions and ginger until lightly browned.
Add the crab
meat and salt stir-fry for 2 minutes. Add the
wine or sherry for 1 minutes.
Mix the
corn-flour and water to a paste stir it into the
pa and simmer, stirring, until thickened. Drain
the noodles well, rinse in cold water the hot
water.
Toss the
remaining oil and arrange on a warmed serving
plate. Top with the cab meat mixture and serve
sprinkle with wine vinegar.
