Chinese Noodles and Pastry Recipes - Noodles with Chicken Recipe

Ingredients

  • 350g/12oz egg noodles

  • 100g/4oz bean sprouts

  • 45ml/3 tbsp peanut oil

  • 2.5ml/1/2 tsp salt

  • 2 cloves garlic minced

  • 2 spring onions, chopped

  • 100g/4oz cooked chicken, diced

  • 5ml/1 tsp sesame oil


Method:

  1. Bring a saucepan of water to the boil, add the noodles and boil until they are just tender.

  2. Blanch the bean sprout in boiling water for 3 minutes then drain.

  3. Heat the oil and fry the salt, garlic and spring onions until softened.  Add the chicken and stir-fry until heated through.

  4. Add the bean sprouts and heat through. Drain the noodles well, rinse in cold water the hot water.

  5. Toss in sesame oil and arrange on a warmed serving plate. Top with the chicken mixture and serve.
