Chinese Noodles and Pastry Recipes - Noodles in Curry
Sauce Recipe
Ingredients
450g/1 lb egg noodles
5ml/1 tsp salt
30ml/2 tbsp curry powder
1 onion, sliced
75ml/5 tbsp chicken stock
100g/4oz roast pork,
shredded
120ml/1/2 cup tomato
ketchup
15ml/1 tbsp hoi sin sauce
salt and freshly ground
pepper
Method:
Bring a pan
of water to the boil, add the salt and toss in
the noodles.
Return to the
boil and boil for about 10 minutes until tender but
still firm. Drain and rinse in cold water, drain,
then in hot water.
Meanwhile,
cook the curry powder in a fry pan for 2
minutes, shaking the pan. Add the onion and stir
until well coated.
Stir in the
stock then add the pork and bring to the boil.
Stir in the tomato ketchup, hoi sin sauce, salt
and pepper ad simmer, stirring , until heated
through.
Arrange the
noodles in a warmed serving dish, pour over the
sauce and serve.
