Chinese Noodles and Pastry Recipes - Noodles in Curry Sauce Recipe

Ingredients

  • 450g/1 lb egg noodles

  • 5ml/1 tsp salt

  • 30ml/2 tbsp curry powder

  • 1 onion, sliced

  • 75ml/5 tbsp chicken stock

  • 100g/4oz roast pork, shredded

  • 120ml/1/2 cup tomato ketchup

  • 15ml/1 tbsp hoi sin sauce

  • salt and freshly ground pepper


Method:

  1. Bring a pan of water to the boil, add the salt and toss in the noodles.

  2. Return to the boil and boil for about 10 minutes until tender but still firm. Drain and rinse in cold water, drain, then in hot water.

  3. Meanwhile, cook the curry powder in a fry pan for 2 minutes, shaking the pan. Add the onion and stir until well coated.

  4. Stir in the stock then add the pork and bring to the boil. Stir in the tomato ketchup, hoi sin sauce, salt and pepper ad simmer, stirring , until heated through.

  5. Arrange the noodles in a warmed serving dish, pour over the sauce and serve.
