Chinese Noodles and Pastry Recipes - Noodles with Egg Sauce Recipe

Ingredients

  • 225g/8oz egg noodles

  • 750ml/3 cups chicken stock

  • 45ml/3 tbsp soy sauce

  • 4ml/3 tbsp rice wine or dry sherry

  • 15ml/1 tbsp peanut oil

  • 3 spring onions, cut into strips

  • 3 eggs, beaten


Method:

  1. Bring a pan of water to the boil, add the noodles and boil for 10 minutes until just tender. Drain and arrange in a warmed serving plate.

  2. Meanwhile, bring the stock to the boil with the soy sauce and wine or sherry.

  3. In a separate pan, heat the oil and fry the sprig onions until softened.

  4. Add the eggs then stir in the hot stock and continue to stir over a medium heat until the mixture comes to the biol.

  5. Pour the sauce over the noodles and serve.
