Chinese Noodles and Pastry Recipes - Noodles Pancake Recipe

Ingredients

  • 225g/8oz egg noodles

  • 5ml/1 tsp salt

  • 75ml/5 tbsp peanut oil


Method:

  1. Bring a pan of water to the boil, add the noodles and boil until the noodles are just tender.

  2. Return to the boil and boil for about 10 minutes until tender but still firm.

  3. Drain and rinse in cold water, then hot water then drain again. Toss with 15ml/1 tbsp of oil.

  4. Heat the remaining oil. Add the noodles to the pan to make a thick pancake.

  5. Fry until lightly browned on the underside then turn and fry until lightly browned but soft in the centre.
