Chinese Noodles and Pastry Recipes - Noodles with Poached Eggs Recipe

Ingredients

  • 350g/12oz rice noodles

  • 4 eggs

  • 30ml/2 tbsp peanut oil

  • 1 clove garlic, minced

  • 100g/4oz cooked ham, finely chopped

  • 45ml/3 tbsp tomato paste

  • 120ml/1/2 cup water

  • 5ml/1 tsp sugar

  • 5ml/1 tsp salt

  • soy sauce


Method:

  1. Bring a pa of water to the boil, add the noodles and simmer for about 8 minutes until just cooked.

  2. drain and rinse in cold water. Arrange in nest shapes on a warmed serving plate.

  3. Meanwhile, poach the eggs and place one on each nest. Heat the oil and stir-fry the garlic for 30 seconds. Add the ham and stir-fry for 1 minute.

  4. Add all the remaining ingredients except the soy sauce and stir-fry until heated through.

  5. Pour over eth eggs, sprinkle with soy sauce and serve at once.
