Chinese Noodles and Pastry Recipes - Noodles with Pork and Vegetables Recipe

Ingredients

  • 350g/12oz rice noodles

  • 75ml/5 tbsp peanut oil

  • 225g/8oz lean pork, shredded

  • 100g/4oz bamboo shoots, shredded

  • 100g/4oz Chinese cabbage, shredded

  • 450ml/2 cups chicken stock

  • 10ml/2 tsp corn-flour

  • 45ml/3 tbsp water


Method:

  1. Parboil the noodles for about 6 minutes until cooked but still firm then drain.

  2. Heat 45ml/3 tbsp of oil and stir-fry the pork for 2 minutes. Add the bamboo shoots and cabbage and stir-fry for 1 minute.

  3. Ad the stock, being to the boil, cover and simmer for 4 minutes.

  4. Mix the corn-flour and water, stir it into the pan and simmer, stirring, until the sauce thickens.

  5. Heat the remaining oil and fry the noodles until lightly browned. Transfer to a warmed serving plate, top with the pork mixture and serve.
