Chinese Noodles and Pastry Recipes - Soft-Fried  Noodles Recipe

Ingredients

  • 350g/12oz egg noodles

  • 75ml/5 tbsp peanut oil

  • salt


Method:

  1. Bring a pan of water to the boil, add the noodles and boil until the noodles are just tender.

  2. Drain and rinse in cold water, then hot water then drain again.

  3. Toss in 15ml/1 tbsp of oil then leave to cool and chill in the refrigerator.

  4. Heat the remaining oil almost to smoking point. Add the noodles and stir gently until coated with oil.

  5. Reduce the heat and continue to stir for a few minutes until the noodles are golden brown on the outside but soft inside.
