Chinese Noodles and Pastry Recipes - Stewed Noodles Recipe

Ingredients

  • 450g/1 lb egg noodles

  • 5ml/1 tsp salt

  • 30ml/2 tbsp peanut oil

  • 3 spring onions, cut into strips

  • 1 love garlic, rushed

  • 2 slices ginger root, minced

  • 100g/4oz lean pork, cut into strips

  • 100g/4oz ham, cut into strips

  • 100g/4oz peeled prawns

  • 450ml/2 cups chicken stock

  • 30ml/2 tbsp soy sauce


Method:

  1. Bring a pan of water to the boil, add the salt and toss in the noodles.

  2. Return to boil and boil for 5 minutes then drain and rinse in cold water.

  3. Meanwhile, heat the oil and fry the spring onions, garlic and ginger until lightly browned.

  4. Add the pork and stir-fry until lightly colored. Add the ham and prawns and stir in the stock, soy sauce and noodles.

  5. Bring to the boil, cover and simmer for 10 minutes.
