Chinese Pork and Ham Recipes - Barbecued Roast Pork Recipe

Ingredients

  • 1.25 kg/3 lb boned pork shoulder

  • 2 cloves garlic, crushed

  • 2 spring onions (scallions), chopped

  • 250 ml/8 fl oz/1 cup soy sauce

  • 120 ml/4 fl oz/1/2 cup rice wine or dry sherry

  • 100 g/4 oz/1/2cup brown sugar

  • 5 ml/1 tsp salt


Method:

  1. Place the pork in a bowl. Mix together the remaining ingredients, pour over the pork, cover and leave to marinate for 3 hours.

  2. Transfer the pork and marinade to a roasting tin and roast in a preheated oven at 200C/400F/gas mark 6 for 10 minutes.

  3. Reduce the temperature to 160C/325F/gas mark 3 for 1 3/4 hours until the pork is cooked.
