Chinese Pork and Ham Recipes - Barbecued Spare Ribs Recipe

Ingredients

  • 3 cloves garlic, crushed

  • 75 ml/5 tbsp soy sauce

  • 60 ml/4 tbsp hoisin sauce

  • 60 ml/4 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp brown sugar

  • 30 ml/2 tbsp tomato puree (paste)

  • 900 g/2 lb pork spare ribs

  • 15 ml/1 tbsp honey


Method:

  1. Mix the garlic, soy sauce, hoisin sauce, wine or sherry, brown sugar and tomato puree, pour over the ribs, cover and leave to marinate overnight.

  2. Drain the ribs and arrange them on a rack in a roasting tin with a little water underneath.

  3. Roast in a preheated oven at 180C/350F/gas mark 4 for 45 minutes, basting occasionally with the marinade, reserving 30 ml/2 tbsp of the marinade.

  4. Mix the reserved marinade with the honey and brush over the ribs. Barbecue or grill (broil) under a hot grill for about 10 minutes.
