Chinese Pork and Ham Recipes - Cold Pork with Mustard Recipe

Ingredients

  • 1 kg/2 lb boned roasting pork

  • 250 ml/8 fl oz/1 cup soy sauce

  • 120 ml/4 fl oz/1/2 cup rice wine or dry sherry

  • 100 g/4 oz/1/2 cup brown sugar

  • 3 spring onions (scallions), chopped

  • 5 ml/1 tsp salt

  • 30 ml/2 tbsp mustard powder


Method:

  1. Place the pork in a bowl. Mix all the remaining ingredients except the mustard and pour over the pork.

  2. Leave to marinate for at least 2 hours, basting frequently. Line a roasting tin with foil and stand the pork on a rack in the tin.

  3. Roast in a preheated oven at 200C/400F/gas mark 6 for 10 minutes then reduce the temperature to 160C/325F/gas mark 3 for a further 1 3/4 hours until the pork is tender.

  4. Leave to cool then chill in the refrigerator. Slice very thinly. Mix the mustard powder with just enough water to make a creamy paste to serve with the pork.
