Chinese Pork and Ham Recipes - Drunken Pork Recipe

Ingredients

  • 1.25 kg/3 lb boneless rolled pork joint

  • 30 ml/2 tbsp salt

  • freshly ground pepper

  • 1 spring onion (scallion), chopped

  • 2 cloves garlic, chopped

  • 1 bottle dry white wine


Method:

  1. Place the pork in a pan and add the salt, pepper, spring onion and garlic. Cover with boiling water, return to the boil, cover and simmer for 30 minutes.

  2. Remove the pork from the pan, leave to cool and dry for 6 hours or overnight in the refrigerator.

  3. Cut the pork into large pieces and place in a large screw top jar. Cover with the wine, seal and store in the refrigerator for at least 1 week.
