Chinese Pork and Ham Recipes - Marinated Pork Chop Recipe

Ingredients

  • 6 pork chops

  • 1 slice ginger root, minced

  • 1 clove garlic, crushed

  • 90 ml/6 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 spring onions (scallions), chopped

  • 15 ml/1 tbsp brown sugar

  • freshly ground pepper


Method:

  1. Cut the bone from the pork chops and cut the meat into cubes.

  2. Mix the ginger, garlic, 30 ml/2 tbsp of soy sauce and the wine or sherry, pour over the pork and leave to marinate for 30 minutes, stirring occasionally.

  3. Remove the meat from the marinade. Heat the oil and fry the pork until lightly browned. Add the spring onions and stir-fry for 1 minute.

  4. Mix the remaining soy sauce with the sugar and a pinch of pepper. Stir into the sauce, bring to the boil, cover and simmer for about 30 minutes until the pork is tender.
