Chinese Pork and Ham Recipes - Marinated Pork Recipe

Ingredients

  • 450 g/1 lb lean pork

  • 1 slice ginger root, minced

  • 1 clove garlic, crushed

  • 90 ml/6 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 spring onion (scallion), sliced

  • 15 ml/1 tbsp brown sugar

  • freshly ground pepper


Method:

  1. Mix the pork with the ginger, garlic, 30 ml/2 tbsp soy sauce and wine or sherry.

  2. Leave to stand for 30 minutes, stirring occasionally, then lift the meat from the marinade. Heat the oil and fry the pork until lightly browned.

  3. Add the spring onion, sugar, remaining soy sauce and a pinch of pepper, cover and simmer for about 45 minutes until the pork is cooked. Cut the pork into cubes then serve.
